İstanbul’da faal olan Osmanlı kahvehanelerinde iç mekân tefriş ve dekorasyonu

Abstract

Bir sosyalleşme mekânı olarak kahvehaneler, Osmanlı İmparatorluğu döneminden beri Türkiye'nin sosyal ve kültürel hayatında önemli bir yere sahiptir. İmparatorluğa 470 yıl boyunca payitaht olmuş İstanbul ise, bu kahvehanelerin zengin tarihini ve geleneklerini yansıtan birçok mekâna ev sahipliği yapmış bir şehirdir. Ancak, 1500’lü yıllardan 1900’lü yılların başlarına kadar faaliyetlerine devam eden Osmanlı kahvehaneleri bu tarihlerden itibaren değişen sosyal hayatın etkileriyle giderek kapanmaya başlamış ve yerini daha çok gazino, pastane, çay bahçesi gibi mekânlara bırakmış, günümüzde ise yerini modern cafe mekânları almıştır. Bu değişim dolayısıyla şehir kültürünün ve mimari mirasın önemli bir bileşeni olan kahvehanelerin iç mekân tasarımları kentsel hafızadan silinmeye yüz tutmuş bir olgudur. Bu çalışmada, İstanbul'da Osmanlı döneminden günümüze faaliyetine devam eden kahvehanelerin tarihsel süreçle birlikte iç mekân tefriş ve dekorasyon tasarımlarındaki değişimlerin tespiti amaçlanmıştır. Yapılan incelemelerde; literatür taramasıyla paralel olarak alan araştırmaları ve yerinde gözlemler gerçekleştirilmiştir. Literatürden elde edilen geçmişe yönelik bilgiler, mekân işletmecileriyle yapılan görüşmelerden alınan bilgilerle desteklenmiş ve yerinde gözlemlerden elde edilen günümüz verileriyle karşılaştırılarak bir değişim incelemesi ve durum tespiti yapılmıştır. Araştırma sonucunda, incelenen on iki adet kahvehanede dekorasyonun ana unsurlarını oluşturan mobilyalar ve klasik düzeni devam ettiren mekân biçimlenişiyle dönem özelliklerini en iyi koruyan mekânların Kadırga Havuzlu Kahve, Pierre Loti Kahvehanesi ve Kanlıca İsmailağa Kahvesi olduğu görülmüştür.

As a place of socialization, coffeehouses have played an important role in the social and cultural life of Turkey since the Ottoman Empire. Istanbul, the capital of the Empire for 470 years, is home to many places that reflect the rich history and traditions of these coffeehouses. However, the Ottoman coffeehouses, which continued their activities from the 1500s until the early 1900s, gradually began to close down due to the effects of the changing social life and were replaced by places such as casinos, patisseries, tea gardens, and today they are replaced by modern cafes. Due to this change, the interior designs of coffeehouses, which are an important component of urban culture and architectural heritage, are a phenomenon that is about to be erased from urban memory. In this study, it is aimed to determine the changes in the interior furnishing and decoration designs of the coffeehouses that continue to operate in Istanbul from the Ottoman period to the present day. Field researches and on-site observations were carried out in parallel with the literature review. The information on the past obtained from the literature was supported by the information obtained from the interviews with the venue operators and compared with today's data obtained from on-site observations, and a change analysis and situation determination was made. As a result of the research, it was observed that Kadırga Havuzlu Kahve, Pierre Loti Kahvehanesi and Kanlıca İsmailağa Kahvehanesi are the places that best preserve the period characteristics with the furniture that constitutes the main elements of decoration and the space formatting that continues the classical order in the twelve coffeehouses examined.
